For this recipe you can replace common flour with oat flour.
Wash, peel and grate the potato. Use the side with the largest holes.
Drain with a clean kitchen cloth to eliminate the extra liquid it may have.
Put the eggs, flour and shredded potato in a bowl. Add salt and pepper and mix well.
Heat a pan over medium-high heat and once heated, pour and spread the oil.
Use a spoon, add the mixture and smash shaping the fritters.
Cook each side over medium heat for about 3 minutes. Once you flip them, cover the pan to achieve an even cooking or until browned.
At the same time, you can make the tartar sauce: Chop the onion (red or white), garlic, scallion and cilantro.
Put everything in a bowl and mix with the vinegar, plain yogurt and a pinch of salt. Optional: Add a pinch of stevia.
You can also put everything in a blender and blitz until getting an even mixture.
