Heat the griddle or grill over high heat. While heating, season the chicken with salt and pepper.
When the grill is heated, pour oil and add the chicken breast, reduce heat to medium and cook for 4 minutes per side.
Remove from heat and shred or cut into bite-size pieces. Set aside.
To make the croutons, toast the bread on both sides in a pan over medium heat.
Then dice and set aside.
