Chickpea, Lettuce, Tomato, Chicken and Onion Salad with Avocado Dressing

Ingredients

• Chickpeas1/2 cup (100 g)
• Chicken Breast120 g
• Lettuce2 cup (70 g)
• Tomato1/2 count (65 g)
• Avocado1/4 count (60 g)
• Onion1/4 count (38 g)
• Yogurt4 tablespoon (60 g)
• Lemon Juice1 tablespoon (15 g)
• Mustard1/2 tablespoon (7 g)

Instructions

   Step 1

   For this recipe you need cooked chickpeas.

   Cook the chicken in a pan or grill. Place over high heat and while heating, salt and pepper the chicken.

   Once heated, add the chicken and cook for 4 minutes per side over medium heat.

   Dice the chicken.

   Separately, shred the lettuce and dice or slice the tomato and onion.

   Separately, peel and mash the avocado using a fork.

   In a bowl mix the yogurt, mashed avocado, lemon juice, mustard and salt and pepper to taste. If desired, add a pinch of garlic powder.
