For this recipe you need cooked lentils.
Add rolled oats to a blender until you have a powdery flour. You can also use quick oats or oat flour.
Preheat 1/3 of the oil in a pan over medium-high heat. Meanwhile, chop the onion and bell pepper.
Once heated, add the chopped vegetables with a pinch of salt to the pan and stir-fry for 3-5 minutes over medium heat.
When the onion takes on a transparent color, add chopped parsley and set aside.
Place the cooked lentils in a bowl and mash until obtain a paste. You can also use a immersion blender.
Add the stir-fry together with the oats and season with salt and pepper to taste. You can add garlic powder, curry, paprika, etc.
Once done, shape into patties and cook in a preheated pan with another 1/3 of oil for 2-4 minutes per side. Remove.
Next, place a pot with water and pinch of salt over high heat.
Peel and alice the carrot. Cut off the ends of the green beans and cut into medium pieces.
Once boiling, add the green beans with the carrot and boil for approximately 6 minutes.
Then remove, drain and season with the rest of oil and lemon juice. Serve with the lentil patties.
