  • Almond Milk2 tablespoon (30 ml)
  • Olive Oil2 teaspoon (7 ml)

    Peel and dice the potato. Place in a pot with boiling water and boil for 10-12 minutes or until soft.

    Simultaneously, place the peas in a pot with boiling water for 6 minutes.

    Chop the garlic and slice the mushrooms, while heating a pan over medium-high heat.

    Once heated, add half of the olive oil, add the garlic along with the mushrooms with a pinch of salt and stir-fry for 5 minutes over medium heat.

    Then add the cooked peas and season to taste. Leave for a few minutes and then set aside.

    Once the potatoes are soft, remove and drain. Mash, mix with the almond milk, the remaining olive oil and salt and pepper to taste.
