For this recipe you need oat flour. If you don't have oat flour available, simply add rolled oats to a blender and blitz until you have a powdery flour. Set aside.
Mix the oat flour with water (1 1/2 of the indicated amount of oats but in ml) and let sit for 5 minutes.
Next, cut the beef into thin strips and chop the vegetables. If you have garlic, chop some and add.
Heat a pan over medium heat. Once heated, pour the oil, spread and then add the vegetables.
Add salt, pepper, paprika, cumin and thyme to taste. Let sit for 5 minutes and then add some water and tomato sauce.
Add the beef, mix, cover and let cook for 8 more minutes.
After the oats are ready, heat a non stick pan over medium heat. If you don't have that type of pan, use some oil.
Once heated, add the oats and spread forming a tortilla. Let cook each side for 2 minutes.
Smash the avocado and season with lemon juice, salt and pepper to taste. If you want, add tomato, onion and chopped cilantro.
Serve the bef with the taco and guacamole.
