For this recipe, the passion fruit needs to be previously cooked and cooled. To do it, cut it in half, put it in a pot full of water and cover.
Heat over high heat and once boiling, let cook for 20 minutes. Let cool and remove the white part with a spoon.
For the flesh (seeds), strain until obtaining the essence. Let cool.
Mix the gelatin with the recently boiled water and let sit.
Blend the white part of the passion fruit with the stevia and almond milk. Pour in a bowl and mix with 2/3 of the diluted gelatin.
In another bowl, add the remaining gelatin with a bit of flesh. You can drain it if you want.
Pour in the previous bowl and refrigerate for 20 minutes.
You can replace stevia with your favorite sweetener. For example, erythritol, sucralose, xylitol, monk fruit, etc.
