Place a pan over medium heat. While heating, cut the beef into strips together with the bell pepper and season with salt and pepper.
Once heated, add the oil, spread and add the beef and peppers.
Cook the beef until cooked to the desired doneness. This may take between 6 - 8 minutes and remove.
Cut the tomato into wedges.
For the guacamole, peel the avocado, cut and mash using a fork.
Season with lemon juice and salt and pepper to taste. Optional: Add onion, tomato and/or cilantro.
Warm the tortillas in a pan for 30 seconds per side.
Fill with the beef, bell peppers, tomato and guacamole. Serve.
