Heat half of the oil in a pan over high heat. While heating, drain and dice the tofu.
Once heated, add the tofu and brown on all sides.
Once done, season with salt and pepper to taste and remove from heat.
Simultaneously, cut the cauliflower into florets and grate to achieve the texture of rice grains. You can also finely chop the cauliflower instead of grating it.
Place a pan over medium heat. While heating, chop the garlic and parsley.
Once heated, pour in the remaining oil and garlic. Stir and cook for 1 minute over medium-low heat.
Next, add the cauliflower, season with salt and pepper, stir, cover and cook for 5 minutes. If you wish, you can add the spices of your choice.
Serve the tofu with the cauliflower rice and add the parsley.
