Instructions
Place a grill or pan over medium heat. While heating, cut the zucchini into thin slices and wash the mushrooms.
Add half of the oil, spread and place the zucchini slices with mushrooms on the grill. Reduce heat to medium-low.
Cook for 3-4 minutes per side until browned. Remove, season with salt and pepper and set aside.
Separately, place the griddle pan or grill over high heat. While heating, season the pork with salt and pepper, bathe with the rest of the oil and sprinkle with paprika.
Once heated, add the pork and cook over medium heat for 6 minutes per side until done.
When flipping, season with a pinch of oregano.
Serve the paprika pork with grilled zucchini and mushrooms on a plate. Sprinkle with the remaining oregano.
You can add other grilled vegetables such as chili peppers or onion and/or add a little lemon juice.
