For this recipe you need cooked lentils.
Place the soy meat in a large bowl and cover with hot (almost boiling) water to hydrate. Add some soy sauce and let sit for 10 minutes until doubled in size.
For the guacamole, mash the avocado in a bowl using a fork and mix with lime juice and salt and pepper to taste. Set aside.
Pour the olive oil in a pan and heat. Once heated, stir-fry the chopped garlic, onion and tomato for 2-3 minutes.
