Instructions
Boil the pasta in water with a little salt following the time indicated on the package. Once done, remove and drain.
Peel and dice the pumpkin trying to have a similar size.
Boil for 12 to 15 minutes or until soft, but not falling apart. When done, remove and drain.
Separately, place a pan over medium heat. While heating, mince the garlic with the parsley and cut the beef into bite-size pieces and season with salt and pepper.
Once heated, pour half of the oil, spread and add the beef. Sear on all sides.
Then add the garlic and parsley. Cook, stirring, for about 6-8 minutes until done.
Add the pumpkin and cook for 2 more minutes.
Season the pasta with the remaining oil and extra parsley and add the pumpkin to the beef.
