For this recipe you need cooked rice.
Cut the broccoli into small florets and cut the carrot into sticks. Next, add to a pot filled with boiling water.
Cook until the vegetables are tender, about 6 minutes for the carrot and 3 minutes for the broccoli. Drain and set aside.
Heat a grill or pan over high heat.
Meanwhile, place the chicken breast in a bowl, season with salt and pepper and add a little soy sauce. Let it marinate for a couple of minutes.
Once heated, add half of the oil and the chicken. Cook for 4-5 minutes per side until done.
One minute before removing the chicken breast, add the pineapple to the pan and brown 1 minute per side.
Mix the soy sauce with the remaining oil (use sesame oil if available), ginger powder and, if desired, a pinch of stevia.
Serve the chicken with pineapple, cooked vegetables and rice. Pour over the sauce.
