For this recipe you can cook the eggplant in oven, air fryer or pan.
Cut the pork into bites and season with salt and pepper to taste. Meanwhile, heat 1/3 of the oil in a pan over high heat.
Once heated, add the pork and brown on all sides for 4 minutes over medium-high heat.
Cover, lower to medium-low heat and let cook for 8-10 minutes until done. Set aside.
