Wash, peel and dice the potato. Place in a pot of boiling water for 10 minutes and remove.
Meanwhile, wash the mushrooms and remove any remaining dirt. If you wish, you can leave them whole or cut them into quarters.
Heat half of the oil over medium heat and add the finely chopped garlic. Brown for one minute.
Add the mushrooms, season with salt and pepper and cook for 2 minutes. Turn off after 2 minutes.
Add the parsley and oregano previously chopped. Mix, cover and let stand for 2 minutes.
Add the potatoes, the remaining oil and mix.
Season to taste and serve.
