Heat water in a pot over high heat until boiling.
In the meantime, peel and cut the potato into small pieces. Dice and marinate the pork with the soy sauce, ginger and garlic.
Once boiling, add the potatoes and let boil for 10 minutes. Remove, drain and set aside.
Next, heat a pan over high heat. Once heated, pour the oil and sear each side for 3 minutes.
Cover and let cook for 10 minutes over medium-low heat. Be careful not to let it burn.
In the meantime, mash the potato with a fork and mix with the milk, butter and salt and pepper to taste.
Once done, serve the mashed potatoes with the pork and sprinkle with cilantro or cilantro seeds.
