Crispy Tofu, Lettuce, Tomato and Cucumber Salad with Sweet Mustard

Ingredients

• Tofu200 g
• Lettuce1 cup (35 g)
• Tomato1/2 count (65 g)
• Cucumber1/2 cup (60 g)
• Olive Oil1 teaspoon (5 ml)
• Mustard1/2 tablespoon (7 g)
• Oil1 teaspoon (5 ml)
• Stevia1/2 packet (1 g)

Instructions

   Step 1

   Drain the tofu well and dice.

   Heat a pan with the oil over medium heat. Once heated, add the diced tofu and brown for 2-3 minutes per side.

   Add the shredded lettuce, diced or sliced tomato and cucumber and crispy tofu to a salad bowl.

   For the dressing, mix the olive oil, mustard and stevia.

   Season the salad with the dressing and serve.
