Simultaneously, place the peas in a pot with boiling water and boil for 6 minutes. Remove and set aside.
Place a pan over medium-high heat. While heating, mince the garlic and slice the mushrooms.
Once heated, add half of the oil and add the mushrooms along with the garlic and a pinch of salt. Stir-fry for 5 minutes over medium heat.
Then add the cooked peas, season with thyme and salt and pepper to taste. Leave for a few minutes, turn off and set aside.
Place another pan over high heat. Once heated, add the rest of the oil and spread.
Crack the egg and cook for approximately 2-3 minutes until the egg white sets. Remove.
In a bowl serve the stir-fried peas with mushrooms and egg.
