For this recipe you need cooked quinoa and corn.
Heat a pan over medium heat. In the meantime, chop the garlic.
Once heated, pour the oil, spread and add the garlic. Stir-fry for some seconds and add the ground beef with salt and pepper to taste.
Heat over medium heat for 8-10 minutes while stirring from time to time until the beef has a darker color.
Once the beef is cooked, add the corn, the quinoa and salt and pepper to taste. Let cook for 2 more minutes and remove.
Cut the bell pepper in half, remove the inner part and seeds. Wash well and fill with the mixture.
Add some fresh cheese on top.
Heat in a covered pan over low heat for 10-15 minutes while checking the bottom part doesn't burn.
You can also cook it in the air fryer/oven over 356°F (180°C) for 15-20 minutes.
Remove and serve.
