For this recipe you need cooked rice.
Wash the spinach leaves and dry well. Then heat half the oil in a pan over medium heat.
Chop the garlic, cut the spinach into pieces and sauté over medium heat for some minutes until it reduces its volume. Set aside.
At the same time, cook the chicken. Place the chicken on a cutting board, cut in half lengthwise and season with salt and pepper.
Stuff the chicken with the spinach filling, roll and tie using a kitchen string.
Heat the remaining oil in the same pan over medium heat. Add the stuffed chicken and brown all the sides until fully cooked.
Once cooked, remove, cut into pieces and serve.
